Her research focuses on the c<strong>hemical characterization of food matrices and ingredients used in dietary supplements<\/strong>, with a particular focus on product quality, safety, and functional value. <\/p>\n\n<p>An important line of research also involves the <strong>study and characterization of food allergens and other molecules implicated in food-related diseases, such as celiac disease<\/strong>. In this area, the <strong>academic spin-off Glutensens<\/strong> was launched, dedicated to the development of a new sensor for detecting gluten contamination in professional and mass catering. <\/p>\n\n<p>During her scientific career, she has contributed to over 1<strong>00 national and international conferences<\/strong>, published over <strong>70 articles<\/strong> in peer-reviewed journals (H-index 24), and authored <strong>5 book chapters<\/strong>.
